Oven Roasted Tomato Sauce

 OVEN ROASTED TOMATO SAUCE

READY IN: 2hrs 20mins

Serves: 4-6

INGREDIENTS

2 lbs large tomatoes

4 garlic cloves, minced 

1 teaspoon dried Italian herb seasoning

½ teaspoon  sugar

1 teaspoon  salt

½ teaspoon  black pepper

2 tablespoons  olive oil

1 onion

Some fresh basil for added flavour.

 

DIRECTIONS

·       Preheat the oven 400°f.

·       Slice tomatoes in half, set aside.

·       Cut onion into small pieces

·       Pour the olive oil onto a large baking sheet and spread it around the sheet.

·       Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.

·       Place the tomatoes cut side down onto the baking sheet and add the onion.

·       Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.

·       Allow to cool.

·       Remove the skins and put the sauce into a large blender with the basil.

·       Reheat sauce if using immediately.

BBQ Jackfruit Sandwiches with Avocado Slaw

 BBQ Jackfruit Sandwiches with Avocado Slaw

Ingredients:

 

BBQ JACKFRUIT

·       2 20-ounce cans young green jackfruit in water (NOT in syrup or brine*)

·       1/4 cup BBQ seasoning (For 1/4 cup or ~45 g BBQ seasoning, use 2 Tbsp brown sugar + 1 tsp paprika + 1 tsp garlic powder + 1/2 tsp salt + 1/2 tsp pepper + 1/2 tsp chili powder)

·       3/4 cup BBQ sauce (ensure it’s vegan // plus more for topping)

AVOCADO SLAW (optional)

·       1/2 ripe avocado

·       1 Tbsp maple syrup (or sweetener of choice)

·       1 lemon or lime (juiced)

·       Salt + pepper (to taste)

·       Water (to thin)

·       2 cups shredded cabbage + carrots (Trader Joe’s has a great cruciferous veg mix)

FOR SERVING

·       4-6 whole grain vegan buns (GF for gluten-free eaters)

·       1/2 cup roasted salted cashews (or roast on your own*)

Instructions

1.              Rinse, drain, and thoroughly dry jackfruit. Chop off the center “core” portion of the fruit and discard. Place in a mixing bowl and set aside.

2.     Mix together BBQ seasoning and add to jackfruit. Toss to coat.

3.     Heat a large skillet over medium heat. Once hot, add 1-2 Tbsp oil of choice and seasoned jackfruit (use more oil, as needed, if increasing batch size). Toss to coat and cook for 2-3 minutes to achieve some color.

4.     Add BBQ sauce and thin with enough water to make a sauce. Stir and reduce heat to low- medium and cook for about 20 minutes (up to 35 minutes on low for a deeper flavor).

5.     Remove lid and stir occasionally. TIP: For finer texture, use two forks to shred the jackfruit as it cooks down.

6.     In the meantime, make slaw by adding all ingredients except vegetables (avocado through salt + pepper) to a small mixing bowl and whisk to combine. Thin with water until a thick sauce is made, then add veggies and toss to coat. Set in the refrigerator until serving.

7.     Once the jackfruit has been properly simmered, turn up heat to medium-high and cook for 2-3 more minutes to get a little extra color/texture (a tip I learned from Namely Marly!). Then remove from heat.

8.     Place generous portions of slaw on the bottom buns, top with generous serving of BBQ jackfruit, and cashews. Serve with extra BBQ sauce!

9.     Leftover jackfruit keeps for up to a couple days in the fridge, though best when fresh.

 

I didn’t have any cabbage, so my avocado slaw had no cabbage, just carrots.

 

Notes

*If you cannot find young jackfruit in water, we would recommend using young jackfruit in brine and rinsing thoroughly.
*To roast your own cashews: Toss 1/2 cup cashews in a bit of oil and sea salt and spread on a baking sheet. Bake in a 350 degree F oven for 10-12 minutes, or until roasty, fragrant and slightly golden brown.

Garniture à sandwich au Tofu Magique

Ingrédients (pour 6-8 sandwichs)

§  1 recette de  Tofu Magique tempérée ou refroidie

§  2 branches de céleri, coupées en dés

§  1 oignon vert, haché grossièrement

§  60-75 ml (4-5 c. à soupe) de végénaise (mayonnaise végétale) du commerce

§  15 ml (1 c. à soupe) de moutarde de Dijon

§  Sel et poivre au goût.

 

Instructions

Mettre les morceaux de Tofu, le céleri et l’oignon vert dans le contenant d’un robot-mélangeur. En procédant par pulsion, hacher finement les ingrédients. Ajouter la végénaise et la moutarde, puis pulser à nouveau quelques fois, jusqu’à l’obtention de la consistance souhaitée. Poivrer, puis rectifier l’assaisonnement, au besoin.

Servir sur un pain frais, dans un tortilla, ou sur une salade.

La préparation se conservera 3-4 jours au réfrigérateur. La congélation n’est pas recommandée. 

 

 

Garniture à sandwich aux pois chiches, façon oeufs!

Ingrédients

§  1 boite (540 ml) de pois chiches, égouttés et rincés

§  45-60 ml (3-4 c. à soupe) de végénaise (mayonnaise végétale) du commerce

§  15 ml (1 c. à soupe) de levure alimentaire en flocons

§  15 ml (1 c. à soupe) de vinaigre du pot de cornichons, ou de vinaigre blanc ou de cidre

§  15 ml (1 c. à soupe) de ciboulette fraiche ciselée, ou l’équivalent de la partie verte d’un oignon vert

§  1 ml (1/4 c. à thé) de curcuma

§  1 ml (1/4 c. à thé) de poudre d’ail

§  1 m (1/4 c. à thé) de sel kala namak, ou de sel de table

§  poivre au goût.

 

Instructions

Mettre tous les ingrédients dans le contenant d’un robot-culinaire. En procédant par pulsions, broyer jusqu’à l’obtention d’une texture grossière (on ne veut pas un hummus, mais bien des pois chiches hachés). Goûter, puis rectifier l’assaisonnement.

Servir sur un pain frais, un tortilla ou sur une salade.

La préparation se conservera 3-4 jours au réfrigérateur. La congélation n’est pas recommandée. 

 

Garniture à sandwich aux lentilles, façon jambon!

Ingrédients (pour 4-6 sandwichs)

§  250 ml (1 tasse) de lentilles rouges (lentilles corails), bien rincées et égouttées

§  375 ml (1,5 tasse) d’eau

§  1 ml (1/4 c. à thé) de sel

§  2 ml (1/2 c. à thé) de fumée liquide

§  5 ml (1 c. à thé) de jus de betterave (ou un petit dé de betterave marinée, écrasé à la fourchette pour en extraire le jus!)

§  45-60 ml (3-4 c. à soupe) de végénaise (mayonaise végétale) du commerce;

§  poivre au goût.

 

Instructions

Dans un petit chaudron, mettre les lentilles bien rincées et l’eau. Porter à ébullition, puis réduire le feu et laisser cuire à petits bouillons durant 7 minutes, ou jusqu’à ce que l’eau soit absorbée et que les lentilles aient une texture al dente. Retirer du feu.

Ajouter le sel, la fumée liquide et le jus de betterave. À l’aide d’un pied-mélangeur, pulser quelques fois la préparation pour bien mélanger tous les ingrédients, en prenant soin de ne pas tout réduire en purée lisse (on veut garder de la texture!). Laisser la préparation tempérer dans un endroit frais.

Ajouter la végénaise, puis mélanger à l’aide d’une fourchette. Poivrer, et rectifier l’assaisonnement au goût.

Servir sur un pain frais, dans un wrap ou sur une salade.

La préparation se conservera 3 à 4 jours au réfrigérateur. La congélation n’est pas recommandée.

Sweet & Sour Tofu

Sweet & Sour Tofu

Servings: 2-4

Ingredients

For the sweet and sour tofu:
·       2 tbsp tamari or soy sauce
·       1 tbsp apple cider vinegar
·       10 ounces firm tofu (275 g), cubed
·       6 tbsp cornstarch
·       Extra virgin olive oil to taste
·       1 carrot, chopped
·       1/2 green bell pepper, chopped
·       1/2 red bell pepper, chopped
·       1/2 onion, chopped

For the sweet and sour sauce:
·       4 tbsp cane, coconut or brown sugar
·       2 tbsp tomato paste
·       1 tbsp apple cider vinegar
·       1 tsp tamari or soy sauce
·       6 tbsp water (100 ml)
·       2 tsp cornstarch

Instructions
1.     Mix tamari or soy sauce and apple cider vinegar in a bowl until well combined.
2.     Add the tofu cubes and let rest for at least 5 minutes.
3.     Drain the tofu and transfer 1/3 of the tofu cubes to a freezer bag with 2 tbsp of cornstarch and toss to coat. Repeat this step with the rest of the tofu and cornstarch. Add more cornstarch if needed.
4.     Cook the tofu cubes in a skillet with a little bit of extra virgin olive oil over medium-high heat until all sides are golden brown. Remove tofu from pan and set aside.
5.     Cook the veggies in the skillet with some water or oil over medium-high heat until golden brown. Set aside.
6.     To make the sauce just mix all the ingredients until well combined.
7.     Add the sauce to a saucepan and cook until it thickens, stirring frequently.
8.     Mix the tofu, veggies and sauce in the skillet, stir and cook for about 5 minutes over medium heat, stirring occasionally. Serve with some sesame seeds on top (optional) and rice.
9.     Keep leftovers in a sealed container in the fridge for 4 to 5 days.

Note: make sauce x1.5 instead of above or not enough.
