 Smash Burger Tacos

IngredientsSauce o 3/4 cup mayonnaise o 1/4 cup onion, finely chopped o 1 tbsp yellow mustard o 1 tbsp sweet relish o 1 tbsp dill pickle, finely chopped o 1 tsp brown sugar o 1 tbsp ketchup o 1 tsp white vinegar
Tacos o 1/2 lb (225 g) medium-lean ground beef o 1/2 cup (40 g) onion, finely chopped o 1/2 tsp garlic salt o 4soft wheat tortillas, each about 8 inches (20 cm) in diameter o slices orange cheese o 1 cup iceberg lettuce, thinly sliced o Sweet pickle, finely chopped, to taste PreparationSauce o In a bowl, combine all of the ingredients. Season with salt and pepper. Refrigerate. The sauce will keep for 1 week in an airtight container in the refrigerator. • Tacos o In a bowl, combine the meat, onion and garlic salt. Season with salt and pepper. o Divide the meat mixture among the tortillas. Lightly press on the mixture to cover the surface of the tortillas and to ensure that it sticks. o Over medium heat, cook one taco at a time in each skillet, meat-side down, for 2 minutes. Press on the tortillas with a spatula to release the juices from the meat. Flip the tacos over and top each one with a slice of cheese. Cook for another 1 to 2 minutes or until the meat is cooked through and the cheese is melted. o Garnish the hot tacos with the sauce, lettuce and chopped pickles. Fold the tacos over and serve immediately.

 Homemade Fully Loaded Nachos

Ingredients 1 tbsp margarine 3-4 large yellow onions, chopped 1 lb ground beef 2 cloves garlic, chopped 1 tbsp taco seasoning ½ 15 oz can refried beans ¼ cup water Restaurant style tostitos Lots of grated cheddar cheese ½ can black beans, drained Pickled jalapenos, as many as you like Con queso sauce Toppings 2 large tomatoes, chopped and without the insides 2 avocado, chopped 1-2 green onions, chopped Sauces Sour cream (mixed with paprika) Salsa Directions Preheat oven to 425 degrees

In a large pan over medium heat, heat margarine. Add in the onions and cook until caramelized

In the meantime in a second large pan, cook the beef until no longer pink. Drain the fat.

Add the garlic and taco seasoning to the meat. Add in the refried beans and water and stir until combined.

Arrange the tortilla chips on a parchement lined baking sheet. Top with 1/3 of the cheese, then the meat/bean mixture, the onions, the black beams. The jalapenos, and a little conqueso.

Bake nachos until the cheese is melted, about 10-15minutes.

Top nachos with tomatoes, avocado and green onions. Serve with sour cream and salsa.
