General Tso’s Tofu - Vegan

General Tso’s Tofu

Ingredients:

For the tofu:
·       10 ounces firm tofu (275g), cubed
·       2 tbsp tamari or soy sauce
·       1 tbsp apple cider vinegar
·       6 tbsp cornstarch
·       Oil of your choice, I used extra virgin olive oil
·       2 cloves of garlic, minced


For the sauce

·       3 tbsp tamari or soy sauce
·       3 tbsp apple cider vinegar, see notes
·       3 tbsp vegetable stock or water
·       3 tbsp cane, coconut or brown sugar
·       1 tbsp cornstarch
·       1/8 tsp red pepper flakes, optional


Instructions

1.     Place the tofu cubes in a bowl or shallow dish.
2.      Add the marinade ingredients (2 tbsp of tamari and 1 tbsp of apple cider vinegar), stir and let rest for at least 5 minutes, preferably overnight.
3.     Drain the tofu and discard the marinade.
4.     Transfer 1/3 of the tofu cubes to a freezer or plastic bag with 2 tbsp of cornstarch and toss to coat. Repeat this step with the rest of the tofu cubes and cornstarch. Add more cornstarch if needed.
5.     Once the tofu cubes are coated with the cornstarch, heat some oil in a skillet and add the tofu cubes. I used extra virgin olive oil, but any oil will do.
6.     Cook the tofu cubes over medium-high heat until all sides are golden brown. Remove the tofu from the skillet and set aside.
7.     Add the garlic to the skillet (add more oil if needed) and cook over medium-high heat for about 1 to 2 minutes, stirring frequently until golden brown. Set aside.
8.     Mix all the sauce ingredients in a bowl (tamari or soy sauce, apple cider vinegar, vegetable stock or water, sugar, cornstarch and red pepper flakes). Set aside.
9.     Add the sauce to the skillet where you had your cooked garlic and cook over medium-high heat until it thickens, stirring frequently. 
10.  Finally, add the tofu cubes, stir and cook for 1 to 2 more minutes.
11.   Serve with some cooked white rice and garnish with some sesame seeds and chopped chives (optional). Keep leftovers in an airtight container in the fridge for up to 5 days.


Notes:
Depending on your taste buds and the type or brand or vinegar you’re using, you may want to add less vinegar to the sauce. Some readers love the recipe just like this, but others prefer the sauce with less vinegar. Add only 1 tbsp of vinegar at first and add more vinegar if needed.

I never press my tofu because I prefer to save some time and also think it’s not necessary, but it’s up to you. I just drain the tofu and discard the liquid.

Firm or extra firm tofu works great. I’ve never tried to use soft or silken tofu myself, but I don’t think it’s going to work.

If you don’t want to use a freezer or plastic bag, just add the cornstarch to a shallow dish, then the tofu cubes and toss to coat.

If you don’t eat soy, you could use cauliflower instead. I’ve seen some recipes online, but I’ve never tried it myself. Tamari or soy sauce can be replaced by coconut aminos.

For an oil-free version of this recipe, bake the tofu at 350ºF or 180ºC until golden brown.

Feel free to use any type of vinegar, starch or sugar you have on hand.

Seving: 4-6 sandwiches

Ingredients:
  • 1 (14-ounce/398 mL) can chickpeas, drained and rinsed
  • 1 celery stalks, finely chopped
  • 2 green onions, thinly sliced
  • 1/3 cup finely chopped dill pickle and sweet pickles
  • 1/4 cup finely chopped red bell pepper
  • 3 heaping tablespoons (45 mL) mayonnaise
  • 1 garlic clove, minced
  • 1 1/2 teaspoons (7.5 mL) old fashioned mustard
  • 2 teaspoons minced fresh dill (optional)
  • 1 1/2 to 3 teaspoons (7.5 to 15 mL) fresh lemon juice, to taste
  • 1/4 teaspoon fine sea salt, or to taste
  • Freshly ground black pepper

Directions:
  1. In a large bowl, mash the chickpeas with a potato masher until flaked in texture.
  2. Stir in the celery, green onions, pickles, bell peppers, mayonnaise, and garlic until combined.
  3. Now, stir in the mustard and dill, and season with the lemon juice, salt, and pepper, adjusting the quantities to taste.
  4. Serve with toasted bread, on crackers, wraps, or on top of a basic leafy green salad. Or just enjoy it all on its own

I love it on 1 slice of toasted rye, with some cheese slices and tomatos

Ingredients:
2 c. a soupe d’huile d’olive
2 oignons haches
700 g de champignons de paris
2 gousses d’ail hachees
½ c. a the de piment de la jamaique moulu (all spice)
2 c. a soupe de sauce soya
1 a 2 c. a soupe de sirop d’erable
2 c. a soupe de pate de tomate
400 ml de lait de coco en conserve (1 canne complete, ne pas utiliser le lait de coco leger)
sel et poivre au gout
4 feuilles de pate phyllo
3 c. a soupe d’huile d’olive
110 g d’epinards frais (1 petit paquet au complet)

Étapes à suivre

Préchauffer un four à 350˚F (176˚C).
Dans une grande poêle, dorer les champignons et les oignons dans l’huile 5 à 10 minutes.
Ajouter l’ail haché, le piment de la Jamaïque moulu,la sauce soya, le sirop d’érable et la pâte de tomate. Saler et poivrer et poursuivre la cuisson 2 minutes.
Incorporer le lait de coco, bien mélanger et faire réduire à feu mi-vif JUSQU'À CE QUE LA SAUCE ÉPAISSISSE en remuant pour ne pas que la sauce attache, environ 10 à 15 minutes.
Sur un plan de travail, huiler légèrement une première feuille de pâte phyllo. Couvrir d’une autre feuille de pâte phyllo et badigeonner légèrement d’huile à nouveau. Répéter jusqu’à ce que vous obteniez 4 épaisseurs de pâte phyllo.
Étendre la pâte phyllo dans un plat rectangulaire, allant au four.
Verser la préparation de champignons dans la pâte et garnir d’épinards.
Refermer la pâte phyllo et huiler légèrement le dessus du feuilleté.
Cuire au four 30 minutes ou jusqu’à ce que le feuilleté soit bien doré.

Ingredients:
1/3 tasse de beurre vegan
½ tasse de farine
1 boite de conserve de lait de coco
1 c. a soupe de fecule de mais
1 ½ tasse de sirop d’erable
½ tasse de cassonade presee
½ c. a the d’essence de vanille
une pincee de sel
1 pate a tarte du magasin, ou une recette maison

Étapes à suivre
Préchauffer le four à 350˚F (175˚C).
Foncer un plat à tarte de 23 cm (9 po) avec une abaisse.
Cuire au four environ 20 minutes ou jusqu’à ce qu’elle soit bien dorée. Laisser refroidir.
Dans une casserole, faire fondre le beurre à feu moyen.
Ajouter la farine en remuant à l’aide d’un fouet.
Incorporer le lait de coco.
Mélanger le sirop d’érable, la cassonade, la fécule de maïs et la vanille.
Ajouter le mélange de sirop d'érable à la farine, porter à ébullition en mélangeant constamment.
Passer au bras mélangeur si nécéssaire.
Laisser bouillir 2 minutes ou jusqu'à ce que le mélange ait épaissis.
Laisser refroidir quelque minutes.
Verser dans la croûte et réfrigérer jusqu’au moment de servir.

Tofu
½ tasse fecule de mais
2c. a soupe levure alimentaire
1c. a the sauge moulue
1c. a the herbes de provence
1c. a the sel
450 g. tofu ferme coupe en cubes
2. a soupe huile vegetale

Sauce
3. a soupe huile d’olive
2 echalotes francaise hachees
3 c. a soupe cognac
3 c. a soupe sirop d’erable
2 c. a soupe moutarde a l’ancienne
1 c. a soupe moutarde de Dijon
½ tasse de bouillon de legumes
2. a soupe levure alimentaire
sel et poivre au gout

Directions pour le tofu
Prechauffer le four a 375 F
Dans un bol, melanger la fecule de mais, la levure alimentaire, la sauge, les herbes de provence et le sel
Ajouter les cubes de tofu et bien melanger afin de les enrober.
Deposer le tofu sur une plaque de cuisson huilee.  Cuire 20 minutes en retournant a mi cuisson.

Directions pour la sauce
Dans une casserole a feu moyen, faire revenir les echalotes francaise dans l’huile 3 minutes.
Ajouter le cognac et poursuivre la cuisson 2 minutes a feu vif.
Ajouter le reste des ingredients de la sauce, bien melanger, reduire le feu et laisser mijoter 5 minutes.
Ajouter le tofu et bien melanger.

Servir avec des patates pilee et des legumes.

Vegetarian Miso Ramen

Ingredients

  • 1⁄2 tbsp sesame oil or other cooking oil
  • 1 clove garlic
  • 2 tsp ginger
  • 4 cups vegetable broth
  • 1 tbsp tamari
  • 2 eggs
  • 200 g ramen noodles or 2 packages instant ramen, noodles only
  • 1⁄2 cup shredded spinach
  • 6 shitake mushrooms sliced
  • 2 tbsp miso paste
  • 1 green onion sliced

Instructions

1.              Fill a medium pot with water and bring to a boil. You will use this pot to cook both the eggs and the ramen noodles
2.     While waiting for the water to boil, place another pot on the burner over medium heat. Add the sesame oil and saute the ginger and garlic for a minute or two before adding the vegetable stock and tamari.
3.     When the pot of water has boiled, add the eggs one at a time using a spoon to slowly lower them into the water. Cook for 6 ½ or 7 minutes for the perfect jammy egg. Remove from the pot using a spoon and place into a bath of cold water and ice to stop the cooking process.
4.     While the eggs are cooking, add the sliced mushrooms and spinach to the broth pot. Cook for 3-4 minutes.
5.     While the vegetables are cooking in the broth, cook your ramen noodles in the pot of boiling water you used to cook the eggs. The directions on my package were to cook for 2 1/2 minutes. Strain the noodles from the water and place into large soup bowls.
6.     Bring the broth pot to a temperature just below boiling and remove from heat before stirring in the miso.(make sure miso is well blended in)
7.     ladle the broth over the noodles then top with the cooked vegetables, a sliced egg, and garnish with green onion.
We also garnished with sesame seeds, nori, chop suey(des feves germees) and sriracha.
